lunch today

Today like most days was filled with highs and lows. The highs being that I ate lots of tasty food and checked off several things from my TO DO list. The low being that I didn't leave my apartment once. What a shame on such a lovely fall day.

My lunch was an effort to use up leftovers and it was SO delicious. A crusty baguette topped with sliced grape tomatoes, feta cheese, kosher salt and cracked black pepper, and a drizzle of good olive oil and balsamic vinegar. It looked as good as it tasted so I snapped a picture. I'm telling you that I learn this lesson over and over again...the best food is simple. A few simple ingredients will make all the difference in the world. Happy lunching!
