caprese paninis


Two of the dishes that we've been enjoying most this summer have been sandwiches and caprese salads. In an effort to avoid the grocery store, I put the remains of our fridge and pantry together to make caprese paninis for dinner. The ciabatta rolls were accompanied by balsamic marinated grilled chicken breasts, fresh tomatoes, basil, and mozzarella. Next time I'll throw a balsamic mayo on there just to seal the deal.
