Plank Cooking


I'm teaching a class on plank cooking this Thursday at Sur la Table and I'm a bit nervous. I cooked a little bit with Cedar wood in culinary school, but a whole class on using different smoking methods and types of wood could be interesting. Any advice? I'll be studying up all day tomorrow to prep for the class. Results to follow...

I'd love to see what you come up with! I've never cooked on a plank, but I've seen several recipes that look great. Seafood seems like the easiest & fastest thing to cook - shrimp would be great.
