A pumpkin recipe I stumbled across the other day is pumpkin bread. Here's the recipe. I hope it gives you something to go off of!<br /><br />Ingredients<br /><br />4-1/2 to 5 cups all-purpose flour <br />3 cups whole wheat flour <br />2 cups quick-cooking oats <br />2/3 cup packed brown sugar <br />2-1/2 teaspoons pumpkin pie spice <br />1-1/2 teaspoons salt <br />1 teaspoon sugar <br />2 packages (1/4 ounce each) active dry yeast <br />1-1/2 cups warm water (120° to 130°) <br />1 cup canned pumpkin <br />1/3 cup unsweetened applesauce <br />1/3 cup canola oil <br />2 eggs, lightly beaten <br />1/2 cup raisins<br /> <br />FILLING: <br /><br />1/4 cup butter, softened <br />1/2 cup packed brown sugar <br />1 teaspoon ground cinnamon <br />Directions<br />In a large bowl, combine 2 cups all-purpose flour, whole wheat flour, oats, brown sugar, pumpkin pie spice, salt, sugar and yeast. Beat in the warm water, pumpkin, applesauce and oil just until moistened. Add eggs; beat until smooth. Stir in enough remaining all-purpose flour to form a firm dough. Add raisins. <br /><br />Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. <br /><br />Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18-in. x 9-in. rectangle; brush with butter to within 1/2 in. of edges. Combine brown sugar and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a short side; pinch seam to seal. <br />Place seam side down in two greased 9-in. x 5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. <br /><br />Bake at 350° for 55-65 minutes or until golden brown. Cool for 10 minutes before removing from pans to wire racks. The cupcake recipe is from Martha and the frosting is just a basic cream cheese frosting recipe.<br /><br />Martha Stewart's pumpkin cupcakes<br />2 cups flour<br />1 tsp baking soda<br />1 tsp baking powder<br />1 tsp coarse salt<br />1 tsp ground cinnamon<br />1 tsp ground ginger<br />1/4 tsp nutmeg<br />1/4 tsp ground allspice<br />1 cup packed brown sugar<br />1 cup sugar<br />1 cup (2 sticks) butter, melted and cooled<br />4 large eggs, lightly beaten<br />1 can (15 oz) pumpkin puree<br />Directions:<br />1. Preheat oven to 350 degrees. Line cupcake pans with paper liners. Set aside. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice. Set aside. <br />2. Separately, whisk together, brown sugar, granulated sugar, butter, and eggs. Add dry ingredients, and whisk until smooth. Whisk in pumpkin puree. [the recipe calls for 15 oz. of pumpkin puree, which is actually half of of the cans of pumpkin you find at most stores].<br />3. Divide batter evenly among liners, filling each about halfway to 3/4 full. Bake approximately 20 minutes, until toothpick comes out clean.<br /><br /><br />Cream Cheese Frosting<br />1/2 cup butter, softened<br />1 pkg. (8 oz.) cream cheese, softened<br />1 tsp vanilla<br />3 1/2 cups powdered sugar<br />Directions:<br />Cream butter and cream cheese together until smooth. Add vanilla. I love the idea of having dip for cookies!<br /><br />Spice Cookies with Pumpkin Dip<br /><br />The Cookies:<br />1 ½ c. butter<br />2 c. sugar<br />2 eggs<br />½ c. molasses<br />4 c. all-purpose flour<br />4 tsp. baking soda<br />2 tsp. ground cinnamon<br />1 tsp. ground ginger<br />1 tsp. ground cloves<br />1 tsp. salt<br />Additional sugar<br /><br />In mixing bowl cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add molasses; mix well. Combine flour, baking soda, cinnamon, ginger, cloves and salt; add to creamed mixture and mix well. Chill overnight. Shape into ½ in. balls, roll in sugar. Place 2 inches apart on ungreased baking sheets. Bake @ 375 for 6 minutes or until edges begin to brown. <br /><br />Pumpkin Dip:<br /><br />1 pkg. (8 oz.) cream cheese, softened<br />1 can (18 oz.) pumpkin pie mix<br />2 c. confectioners’ sugar<br />½ to 1 tsp. ground cinnamon<br />¼ to ½ tsp. ground ginger<br />1- 1 ½ tubs Cool whip<br /><br />Beat cream cheese in a mixing bowl until smooth. Add pumpkin pie mix; beat well. Add sugar, cinnamon, and ginger; beat until smooth.
